Blueberry Lime Anytime-of-Day Scones

Preheat the oven to 400F

Mix together:

2 cup flour
1 tablespoon of baking powder
1 tablespoon of lime zest
Pinch of salt
1/2 cup of sugar

Add in 1/2 a cup of cubed cold butter and mix until the batter is like crumbs

Add in:

1/2 cup of cashew milk
1 egg (beaten)

Mix well and knead the dough.

Make a one inch thick circle on a parchment paper covered oven cooking sheet. Cut triangles. In each triangle, push in 4-6 blueberries.

Cook for approximately 20 minutes or until lightly browned

Pull out of the oven and sprinkle with lime juice and sugar.

Done! Enjoy!
